Tortilla Soup ( Sopa De Tortilla) Recipe

Ingredients
  

  • 6 corn tortillas
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 medium tomatoes, cut into fourths
  • 1 small onion, cut into fourths
  • 1 garlic clove
  • 2 (10 1/2 ounce) cans condensed chicken broth
  • 1 -10 1/2 ounce soup can water
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 1 sprig mint (optional)
  • 1 cup monterey jack cheese
  • cheddar cheese

Instructions
 

  • Cut the tortillas into 1/2 " strips. Heat oil in a 10' skillet, fry strips in batches until golden brown. stirring occasionally, about 3 minutes. Drain.
  • 2. Place the 1/4 cup water, tomato, onion and garlic in blender, puree until smooth. Heat tomato mixture, broth, water and spices in a 3 quart saucepan, simmering for about 3 minutes. Sprinkle each serving with tortilla strips and cheese. Enjoy!
