Shrimp With Avocado "ceviche" Recipe

I wasn't sure how this would turn out w/imitation crab, but it worked! (I let it sit overnight but I'm posting the original recipe for those that want to try it with the real thing) And make sure you don't use canned salsa... I learned the hard way!...And don't forget the salt and pepper. This is a Sandra Lee recipe.

Ingredients
  

  • 1/2 lb cooked bay shrimp
  • 1 lime, juiced
  • 1/2 cup store bought pico de gallo
  • 2 tablespoons finely chopped fresh cilantro leaves
  • 1 avocado, diced
  • salt and pepper

Instructions
 

  • In a medium bowl, combine shrimp, lime juice, pico de gallo, and cilantro. Let stand 5 to 10 minutes. Add diced avocado and toss to combine. Season, to taste, with salt and pepper. Serve immediately.
